Creamy Chicken Enchiladas Supremo

What a delightful surprise we had for dinner last night! I was busy working on some projects in my office, but I could hear Margie whipping up something that I could only describe as Creamy Chicken Enchiladas Supremo in the kitchen! Sure enough, it didn’t take long for Squirt to get in on the action… “FOOOOOD” I heard squeeling from the other side of the house as the aromas reached throughout and made everybody’s stomachs growl.

Sometimes I’m amazed how even the simplest meal can be a delight if you know the little secrets of the dish… Not sure if you can tell from the photos, but she got the enchiladas nice and crispy before adding the toppings, which include tomatoes and olives and of course, cheese! Gotta have the cheese! Yum!

And then, having some leftover tomatoes and olives with Goya seasoning to top it all off? Oh yeah, it’s dinner time!!!

The best part of this meal, perhaps, is just how easy and inexpensive it is to make… The enchiladas were store-bought, and Margie got them on sale. She’ll have to tell you more, but she told that their ingredients made her crave more of a creamy presentation of it, as opposed to a spicy-Mexican one, so she got a can of cream of chicken soup to go with it.

Even the cat approved! I think you can tell from the picture that she knew she wasn’t going to get any! Hahahaha!
